Ingredients

Scale

For the Crust:

  • 1 cup all-purpose flour
  • ½ cup unsalted butter, softened
  • 1 cup chopped pecans

For the Cream Cheese Layer:

  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 8 oz whipped topping (such as Cool Whip), divided

For the Pudding Layer:

  • 2 packages (3.4 oz each) instant chocolate pudding mix
  • 3 cups cold milk

For the Topping:

  • Remaining whipped topping
  • ¼ cup chopped pecans (for garnish)
  • Chocolate shavings or caramel drizzle (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C).
  2. Combine flour, softened butter, and chopped pecans in a mixing bowl.
  3. Press the mixture evenly into a greased 9×13-inch baking dish.
  4. Bake for 15-20 minutes or until golden brown.
  5. Cool completely before adding the next layer.

2. Make the Cream Cheese Layer:

  1. Beat softened cream cheese and powdered sugar until smooth.
  2. Fold in half of the whipped topping until well combined.
  3. Spread evenly over the cooled crust.

3. Prepare the Chocolate Pudding Layer:

  1. Whisk pudding mixes with cold milk until thickened (about 2 minutes).
  2. Spread pudding mixture evenly over the cream cheese layer.

4. Add the Final Toppings:

  1. Spread remaining whipped topping over the pudding layer.
  2. Garnish with chopped pecans, chocolate shavings, or a drizzle of caramel.

5. Chill & Serve:

  1. Cover and refrigerate for at least 4 hours (overnight for best results).
  2. Slice, serve, and enjoy!

Notes

  • For a different twist, try using butterscotch or vanilla pudding instead of chocolate.
  • Homemade whipped cream can be used instead of Cool Whip for a richer flavor.
  • Letting the cake chill overnight enhances the flavors and texture.
